Parsnip Soup w/ Garam Masala

2 T butter
2 C chopped scallions
3 cloves garlic, minced
11/2 tsp. garam marsala (or curry)
1 tsp. fennel seeds (optional)
2 lbs. parsnips, peeled and chopped into 1/2 in. pieces
6 C water
3/4 C white wine
1/2 tsp. salt
fresh ground pepper
1T chopped parsley

In a large pot melt butter and add scalions. Cook about 10 min. stirring occasionally. Add garlic and spices, stir 2 min. more.  Add parsnips and water. Cover and simmer 30 minutes. Add wine and simmer uncovered 10 minutes more.  Mash or puree. Season with salt and pepper. Serve sprinkles with fresh parsley.
